HILLVIEW — A new Grade A business has officially opened its new state-of-the-art warehouse location in Bullitt County. 
 
A few dozen local officials and business representatives attended the ribbon cutting for Brooks Grading, a new egg distribution facility located in Hillview. 
The new facility contains 70,000 square feet of manufacturing space along with an additional 5,000 square feet of office space, providing two work shifts for about 100 employees. 
Plant manager Mac Reed said the new location was the first of three egg-grading facilities to be opened in the interstate area over the next few years. 
Originally from Louisville, Reed said he was hired to manage the location, selected due to its proximity with Interstate 65 and the Louisville area. 
“We have a proximity to our farms,” Reed said. “We own over 60 in Kentucky. The company is looking to triple its size overall in three years, mostly covering the tri-state area. 
Brooks Grading supplies HBF Foods, based in Tennessee. Reed said HBF Foods works with hard-boiled eggs and produces ready-to-eat products. 
Oolie, which features egg-based dips and yogurts, is a major company supplied by Brooks Grading. 
“We supply those eggs,” said Reed. “Also, a majority of our business goes to Costco and Sam’s Club.” 
According to Reed, pallet come in from the farms, with each truck containing 30 pallets. The eggs are tempered and then go into an assembly line. 
Once loaded in, the eggs travel through wash tanks and our rinsed, then inspected with A.I. to search for cracks, blood spots, and other imperfections. 
From there, the eggs head off into one of 24 packaging lanes, based on their sizes, and are hand-stacked onto pallets for further shipment. Reed mentioned each pallet contained 720 dozen eggs. 
“We have over 190,000 eggs produced per hour,” he added.
